JACK NOLAN | OWNER
Jack has a strong passion for great food and exceptional customer service which comes from over 25 years in the food service industry. He has worked in nearly every position in a restaurant, from dishwasher to general manager. He brings all of his “front-of-house” operations expertise from working at such well-known local restaurants as Glen Ella Springs, Lake Rabun Hotel, Julia’s, The Stockton House, Rumor Hazit and Zeppelins to Fortify Kitchen & Bar. Jack’s favorite part of working in the industry is the opportunity to meet and serve people and he takes great pleasure in creating an atmosphere and dining experience that is not just a meal, but an event that wows them! He is proud to live and work in Rabun County. Jack spends his spare time with his wife and two children, enjoying cooking, music and sports together.
JAMIE ALLRED | OWNER & CHEF
Throughout his culinary career, Chef Jamie has earned many honors including Trip Advisor awards, Open Table awards, and 2013, 2014, 2015, and 2016 Best Chefs America honoree where he was chosen in the top 1% of working chefs by his peers. He also actively participates in the Farm to School program in Habersham County, works with Georgia Organics promoting the local food scene, and is working with the Northeast Georgia Food Bank bring a food hub to Clayton. Originally from Winston-Salem, NC, Chef Jamie has been in Rabun County since 2010 when he became the Executive Chef at The Lake Rabun Hotel & Restaurant, where he developed relationships with over 25 farms and raised the bar for culinary excellence in the North Georgia Mountains. In 2014, Jamie opened Fortify Kitchen and Bar with Jack Nolan where they have improved Clayton’s dining scene with an exceptional staff and service, local and sustainable food, and incredible atmosphere.
